There are truffles like the black winter variety that is best bought during its peak season which is from February to March. Truffles have their own characteristics and colors which could change based on their age or maturity. For example, black truffles when still young would have red exterior color with the inside white instead of black. What also makes truffle prices soar is the difficulty of finding and harvesting these mushrooms. Typically, truffles are hunted by dogs and pigs that are specially trained so that they can use their sharp sense of smell to find truffles and to dig them. It didn t help that in 2003, France suffered a heat wave, which took a toll on the living environment of truffles. The aroma is actually more overwhelming than the flavor of the truffles, so much so that it becomes the flavor itself. It s what your taste buds sense rather than the actual flavor, unless the truffle variety has a taste that resembles that of a garlic and other strong-flavored spices.
